About Botrytis:
It is only possible to produce botrytised wines under specific conditions. Alternating periods of dampness and dryness must occur for the Noble Rot (Botrytis Cinerea) to truly take hold. The mold shrivels the grapes, concentrating the sugars, acids and flavors. From this, very little juice flows. What results is a deliciously honeyed golden nectar of unparalleled complexity that can be aged for decades.
