Wine purists know that sublime food and wine pairings actually start with the magical combination of climate, soil, grapes and people. At the winery, Chef Perry Hoffman of Michelin-starred étoile Restaurant has elevated these qualities with a spectacular new set of pairings. Come visit us for a tour and tasting to see first-hand how his inspired creations will heighten your experience of the wine, all the while enjoying the view of our steep, dramatic vineyard blocks and famous "Pino Solo." We also invite you to recreate these pairings in the comfort of your home with friends.

"2009 was ideal for Cab, Spring rain washed away drought worries, and mild weather in late summer and fall slowed maturation, allowing the fruit to ripen and flavors to develop. Late rains might have caused concern, but most of our fruit was already harvested. For us, luckily the rains extended hang time for some Spring Mountain blocks, allowing them time to fully ripen until we selectively harvested in late October."
"In every vintage we focus on 'terroir balance'-the harmony between vines, soil, environment and farming, The result in 2009 was an Unfiltered Cabernet Sauvignon of distinct character, intense fruit and purity of terroir." |
