Jean-Jacques Girard's family was growing grapes in Savigny-lès-Beaune back in 1529. That, as the French say, is 'formidable', and would make the domain one of the oldest in Burgundy.

But really what matters to us today is what happened to the domain in the past generation. Until the late 90s, Jean-Jacques father, Georges, ran the Domaine Girard-Vollot with infectious good humor, bringing his two sons, Jean-Jacques and Phillipe, into the business as they came of age. But when father bowed out, the sons soon saw that each had his own vision and style, and the domain was split, pretty much down the middle.

The original domain was about 38 acres. And since the split, Jean-Jacques has built his holdings back to over 40 acres, making it one of the most impressive domains in Savigny. He has been a busy man in the process, adding to his impressive array of Savigny 1er Cru vineyards with parcels in Pernand Vergelesses 1er Cru in red and white, a Beaune 1er Cru 'Clos du Roi', some Volnay and Pommard and a little jewel in Corton-Charlemagne.

Savigny les Beaune lies in a peaceful valley rimmed in hardwood forest. The soil make-up under the rim ranges from crumbly shale to compact clay, and expositions range from north-east to full south, giving incredible diversity within a relatively small zone. Generally, however, Savigny produces some of the most perfumed wines of the Cote d'Or, both red and white.

We got a great question...
What is your recommendation for the latest date a Chablis should be drunk, i.e., 4 years, 6 years, 8 years?

Good question. Simple response is that it's always depends on the vintage. And then of course, on whether its Chablis, 1er Cru or Grand Cru. If you bought 2002 from us, it would have been 1er Cru, my guess. And I would say that I would expect a 2002 at 14 years to be either too old, or a particular manifestation of chardonnay. I would expect the former, given the vintage!

Recent Chablis vintages that will last...?? 2010 everyone says is solid. 2009 has less acidity and will be great in the short term. But really, if you want to keep Chablis to age +8 years...you should be in Grand Cru..

2010 is an excellent vintage in Chablis, with more acidity than the slightly over ripe 2009s. The locals consider it to be the most 'typically Chablis' vintage in years. High praise for winemakers!

2010 Chablis 1er Cru 'Mont de Milieu'

Chablis 1er Cru 'Mont de Milieu' is a 'right bank' south-facing vineyard, on Kimmeridgian clay. This vineyard, like the Grand Cru vines, tends to get a bit more sun in the year, and hence can be riper and richer at harvest. For this reason, some of the grapes (usually 20%) are fermented in old oak barrels (used for 4 years). The rest is fermented as are the other wines of the domain, in stainless tanks. Aging as well takes place in the same recipients, 20% oak, 80% vat. Malolactic fermentation is controlled by temperature as to be most efficient. Maturation takes place in the stainless tanks, again with cold treatment to precipitate tartaric acid.

The Chablis 1er Cru 'Montmains' on the left bank' of the river with south-south-east facing slopes, is entirely on the distictive Chablis Kimmeridgian clay. The goal is to keep the freshness of the fruit, accentuate the floral notes and to bring out the minerality of the sub-soils. This is done with extensive use of stainless steel and no oak. Both fermentions, alcoholic and malolactic, take place in stainless under temperature control. Maturation also takes place in the stainless tanks, with cold treatment to precipitate tartaric acid.
