Delicious Slow Roasted Pork Tacos served with Kathy's Cuvee Viognier!
If you made a New Years Resolution to spice up your life then you have got to try these Pork Tacos perfectly paired with Kathy's Cuvee Viognier that is on sale for only $20 this month!

Recipe: Serves 6 to 10 guests
Ingredients:
2 lbs pork shoulder, trimmed of most of the cap fat, but leaving a thin covering.
Spice Rub:
1 tablespoon kosher salt
1 tablespoon garlic powder
1 tablespoon chile powder
1 tablespoon ground cumin
2 teaspoons fresh ground black pepper
2 teaspoons cayenne pepper
Accompaniments:
a dozen warm tortillas (corn and/or flour)
1 Cup simple slaw (recipe below)
1 Cup guacamole
1 cup tomato salsa
Creamy Hot Sauce:
1/4 sour cream mixed with 1/4 cup of your favorite hot sauce
Directions:
1. Coat the pork shoulder with the spice rub, wrap in plastic, place on a plate and marinate in the refrigerator for 1 hour.
2. Cook the pork on a covered grill with medium heat coals or in a crock-pot or in a baking dish in an oven at 275 degrees for 3 hours.
3. Remove from the grill, crock pot or oven and transfer to a cutting board. Using 2 large forks or your fingers, pull the pork apart into small chunks. Place the meat in a bowl and cover with foil to keep warm.
4. To serve, roughly chop the pork and place on a plate and serve alongside warm tortillas, simple slaw, salsa, guacamole and Creamy Hot Sauce.
Simple Slaw:
1/4 head of Green Cabbage, finely shredded
1 green apple, quartered, cored and finely julienned
juice of two limes
salt and pepper to taste
Mix everything together in a mixing bowl, season to taste and let macerate for about 15 minutes.
