Wine Tip: Serving and Storing Wine in Summer
As wine expert Hugh Johnson said, "Wine's first job is to be refreshing." Like other beverages, wine is more agreeable in summer when served cooler than usual. Serve summer whites a few degrees cooler than reds; 30-45 minutes in the fridge, or 20 minutes submerged in ice water, is usually plenty to insure delicious results. And if it's sultry, even red wine benefits from 15-20 minutes of chilling as good insurance against incidental household heat.

Recipe for July BBQ: Grilled Trout with Apricot Salsa
A sultry July BBQ is no time to be working overtime in the kitchen! Relax and enjoy the day with this grilled trout, an excellent partner for herbed rice salad and chilled Malvasia Bianca or Sauvignon Blanc. Why not follow up with strawberry shortcake?

Serves 4  

INGREDIENTS:
4 6-ounce rainbow trout fillets
Grape seed or vegetable oil for grate
1 cup fresh apricots (or peaches, peeled), diced
1 small avocado, diced (1 cup)
3/4 cup fresh pineapple, diced
1/4 cup red pepper, diced
1 cup fresh lime juice
2 teaspoons cilantro, finely chopped
Salt and coarsely ground pepper to taste

PROCEDURE:
In a medium bowl, gently combine apricots, pineapple, avocado and red pepper. Fold in the lime juice and cilantro; season to taste and chill. Prepare a medium barbecue fire and season the trout lightly with salt and pepper. Grill in a basket or on a lightly oiled grate for 2 minutes. Gently turn fish and grill for 2 more minutes, or until trout turns opaque. Top with apricot salsa and serve immediately.
