Chardonnay Farina 2011


The picturesque Farina Vineyard on Sonoma Mountain is framed by native oaks. Positioned on an east-facing slope at 600 feet of elevation, this tiny vineyard's unique soils and mesoclimate foster small, highly concentrated grapes. Vinified with traditional winemaking techniques our chardonnay captures the vineyard terroir in its silky, complex fruit character, integrated with toasty nuances. Only 332 cases produced.
Syrah Acacia Vineyard®

These Syrah grapes were hand-sorted at Acacia Winery and fermented in a small stainless steel fermentation tank. The wine was aged in a selection of French oak barrels for sixteen months. You will enjoy the aromas of ripe plum and baking spice, which are complimented by a rich mouth feel and long finish.

The Acacia Viognier displays classic varietal character evoking apricots and orange blossoms on the fragrant nose and filling the mouth with its viscous, flinty texture and body. It is perfumed with honeysuckle and jasmine, and replete with various stone fruit flavor. This crisp, refreshing Viognier makes an excellent match to lightly spiced fish and grilled turkey dishes. It is also delightful unaccompanied as an apéritif.

1½ pounds salmon fillet, skin removed
1 tablespoon lemon-and-pepper seasoning
¼ cup canola oil
2 tablespoons red wine
2 tablespoons spicy brown mustard
1 teaspoon sugar
1 (6-ounce) bag shredded red cabbage
2 scallions, sliced
¼ cup tartar sauce
¼ cup sweet chili sauce
¼ cup whipped cream cheese, softened
8 mini buns
Kosher salt, to taste
Black pepper, to taste

DIRECTIONS :
Preheat grill to medium-high heat.
Cut salmon fillet into 2-inch squares so that you get 8 portions. Season both sides of each salmon fillet with lemon and pepper seasoning.
Brush the grill grate with a paper towel that has been soaked in canola oil. Grill salmon 3 minutes per side or until just cooked through.
In a large bowl, whisk together the vinegar, mustard, and sugar. Add cabbage and sliced scallions and toss to coat.
In a small bowl, stir together the tartar sauce, sweet chili sauce, and cream cheese.
Spread about 1 teaspoon of sauce on the tops of the buns. Place salmon on bun and top with crispy slaw.

1.5 oz Butterfly Kiss® Pinot Grigio
1 oz Smirnoff® Sorbet Light Pomegranate Raspberry
1 oz Lemon Juice
0.5 oz Mango muddled
4 leaves Basil muddled
Garnish: Mango slice and basil leaf

DIRECTIONS:
Shake all ingredients and strain into wine glass filled with ice.
