Hot off the Winepresses!
The 2014 vintage is off to a great start! We have had an excellent fruit set in the vineyards with little to no frost damage, which suggests above average crop levels for this vintage. The warm weather is predicted to accelerate harvest by 1 to 2 weeks. In the cellar, blending and bottling are in full swing. We will soon be bottling our new & exclusive Cellar Club 2013 Grenache, 2013 Malbec, 2013 Winemakers' Select White Blend, and 2013 Pinot Blanc to be released later this year. Important Grilling Tips from Chef Joey Altman:
• Reserve applying your sauces or glazes to the last minute so they can caramelize but not burn.
• Allow your meats to rest off the grill for at least 2 minutes per pound to allow the juices to settle and the meat to be handled for slicing. Also, covering with foil will help them retain their heat.
• When grilling keep small items like burgers, fish and boneless chicken breasts cold before grilling so they stay moist.
Larger items like large steaks, loins and roasts should come to room temperature prior to grilling so they can cook through without burning or over cooking the exterior
When planning your Picnic:
* Keep your food options simple
* Think of foods that are easy to eat with your hands
* Bring foods that can keep and eat well cool
* Don't forget to take an ice pack!
